Located in the historic Fulton Market district of Chicago’s West Loop neighborhood, Rose Mary is Chef/Owner Joe Flamm’s debut restaurant inspired by his Italian heritage and the bold, bright flavors of Croatian cuisine. The boisterous space—named for Flamm’s grandmothers, Mary and Mary Rose, and the herb rosemary, which grows natively along the Italian and Croatian coastlines—offers a seasonal menu of rustic yet refined dishes that encapsulate what Flamm has coined “Adriatic drinking food.”

Located in the historic Fulton Market district of Chicago’s West Loop neighborhood, il Carciofo is a Roman Italian restaurant drawing inspiration from the restaurants and markets in one of Chef Joe's favorite cities, Rome. The restaurant offers a seasonal menu of elevated yet familiar Italian fare with traditional antipasti, Roman-style pizzas, hand-rolled pastas produced daily in a dedicated pasta lab and market-driven mains that highlight the season's bounty.

Bar Tutto is an all-day Italian café offering quick grab-and-go options at the café counter and full-service breakfast, lunch, and dinner with brunch on the weekends in the main dining room.
Inspired by the lively wine bars and restaurants that line Italy’s timeless piazzas, Bar Tutto is a place for an early morning espresso, a midday work lunch, or a spirited evening over dinner and late-night spritzes with friends.

Founded by Frank Callero, Kara Callero, Steve Zaleski and Chef Joe Flamm, Day Off Group is a Chicago-based restaurant group with a passion for developing concepts that celebrate good food, good company, and the highest level of hospitality. BLVD Steakhouse, the group’s flagship restaurant inspired by Old Hollywood’s Sunset Blvd, opened in June 2017 in Chicago’s Fulton Market district to critical acclaim, earning Eater Chicago’s “Design of the Year” award, recognition as one of Chicago Magazine’s “Best New Restaurants,” and three stars in the Chicago Tribune’s “RedEye”. Day Off’s second concept, Rose Mary, is inspired by Bravo Top Chef Winner and Day Off Culinary Director/Chef Partner Joe Flamm’s Italian heritage and the bold, bright flavors of Croatian cuisine. Since opening in April 2021, Rose Mary has remained one of the most coveted reservations in Chicago, receiving wide praise that includes being named a “Most Highly Anticipated Restaurant Opening'' by both Food & Wine and Robb Report, a “Best New Restaurant” by the Chicago Tribune, AFAR Magazine and TimeOut Global, and one of “The 38 Essential Restaurants in Chicago” by Eater Chicago.
In December 2024, Day Off introduced their third concept, il Carciofo, a Roman Italian restaurant inspired by one of the partners’ favorites cities, Rome. il Carciofo was featured in “Conde Nast Traveler’s 2025 Hot List”, celebrated as one of the best restaurant openings in the United States.
